SOLE

The soles are a family (Soleidae) fish comprising more than a hundred species. They are flatfish that live at the bottom of courses fresh and salt water, feeding on crustaceans and other invertebrates.

They are highly appreciated in gastronomy for its fine white meat, delicately flavored. Among the most consumed species is the common sole.
